Beet Card with Prose

When beet season comes, that means it’s time to make some of my favorites, borscht and beet salad. Borscht is this hefty stew of shredded beets slow-cooked with beef, the ultimate comfort food on a chilly winter night. Beet salad is a very flexible dish, and you can add almost any combination of fruits, nuts, and greens to the cooked and peeled beets. Then just toss with a vinaigrette, and voila, you’re good to go.

Send a classic vegetable greeting card for a thank you note or any occasion. This card depicts a hand-painted print of beets along with text that says the following:

“BEETS / Beta vulgaris: Both leaves and roots are edible / Used in industry to color other red foods / Good source for the vitamin folate / Plant seeds directly into ground / 55-60 days from seed to harvest / Favorite uses: borscht, beet salad / with goat cheese and walnuts”
