Description
When beet season comes, that means it’s time to make some of my favorites, borscht and beet salad. Borscht is this hefty stew of shredded beets slow-cooked with beef, the ultimate comfort food on a chilly winter night. Beet salad is a very flexible dish, and you can add almost any combination of fruits, nuts, and greens to the cooked and peeled beets. Then just toss with a vinaigrette, and voila, you’re good to go.
