When beet season comes, that means it’s time to make some of my favorites, borscht and beet salad. Borscht is this hefty stew of shredded beets slow-cooked with beef, the ultimate comfort food on a chilly winter night. Beet salad is a very flexible dish, and you can add almost any combination of fruits, nuts, and greens to the cooked and peeled beets. Then just toss with a vinaigrette, and voila, you’re good to go.
Send beet cards for a thank you note or any occasion. This greeting card depicts a watercolor painted beet design printed with or without prose that says the following:
“BEETS / Beta vulgaris: Both leaves and roots are edible / Used in industry to color other red foods / Good source for the vitamin folate / Plant seeds directly into ground / 55-60 days from seed to harvest / Favorite uses: borscht, beet salad / with goat cheese and walnuts”
