Description

It was August, and the garden was in peak form. Vegetables burst outside of their spaces, billowing over paths, twisting up fence lines. The lacinato kale commandeered a back corner, its blue-gray ruffled leaves looked regal in their stature. I snapped off the leaves at their bases and placed them in my basket. On ordinary days, kale finds its way into my soups, smoothies, and salads.

That day, however, I was throwing a garden produce party, and kale was going to be a star of the show. In my kitchen I brushed the leaves with olive oil, sprinkled them with sea salt, and placed them in a hot oven to crisp up. Thus kale chips were born, a savory and salty counter to the creamy artisan cheeses on an antipasto board.
